It is different from normal tea, here we have used flower tea.Sometimes flower tea is used to make iced tea healthy.The seeds used for Purple Ice Plant can be of different brands.Iced tea is mostly on the café’s menu. I am sharing a recipe of Apricot and Lavender Iced Tea from my restaurant.

  • Lavender: 3 grams
  • Hot Water: 120 ml
  • Fresh Lemon Juice: 20 ml
  • Dried Apricots: 20 grams
  • Honey: 1 teaspoon optional
  • Ice Cubes: As needed
  • Fresh Mint Leaves: For garnish optional

Instructions
 

Brew the Lavender Tea:

  • o Start by placing 3 grams of lavender in a bowl.
  • o Pour 120 ml of hot water over the lavender.
  • o Let it steep for 5-10 minutes. Once done, strain the lavender out and let the tea cool.

Prepare the Apricots:

  • o Chop 20 grams of dried apricots into small pieces.
  • o Put the chopped apricots in a small saucepan and add just enough water to cover them.
  • o Simmer on low heat until the apricots are soft and most of the water is absorbed, which should take about 5-10 minutes. Let it cool.

Mix the Ingredients:

  • o In a pitcher, shaking the cooled lavender tea with 20 ml of fresh lemon juice.
  • o If you prefer a bit of sweetness, add 1 teaspoon of honey.
  • o Add the softened apricots, including any liquid left in the saucepan. Stir everything together well.

Serve the Tea:

  • o Fill your glasses with ice cubes.
  • o Pour the apricot and lavender iced tea over the ice.
  • o For an extra touch of freshness, garnish with a few mint leaves if you like.
